Basque chef with extensive experience in the hospitality industry, Josean Merino has skillfully combined traditional Basque cuisine with a contemporary and innovative vision. Founder of the successful PerretxiCo tavern concept, his cooking draws from classic recipes, adding creativity and technique. In 2023, he took over the direction of the historic Jose Mari Taberna, where he reaffirms his commitment to cuisine rooted in tradition, accessible and of high quality in every ingredient. His work has been recognized with various awards, and he is noted for his culinary and social sensitivity, supporting charitable causes through his cooking.
